CHOCOLATE CHESS PIE FOR SPENCER
1/4 c. milk or half & half
1 tsp. vanilla
1 T. flour (plain only)
1 9 inch prepared pie shell (unbaked)
1 stick butter or margarine
3 T. cocoa powder
1 1/2 c. sugar
3 eggs
Melt butter. Mix dry ingredients in separate bowl. Pour into
butter and stir to mix. Add eggs one at a time. Add milk and vanilla and
pour into unbaked pie shell. Bake at 350° for approximately 40 minutes.

DANIEL'S FAVORITE "KITTY PAWS"
1/2 c. peanut butter
1 bag mini marshmallows
1 bag chocolate chips
Spray a 9 x13 pan with Pam cooking spray. Cover bottom of pan with mini
marshmallows. Melt one bag of chocolate chips in microwave and add 1/2 cup
of peanut butter - stir well and pour over the mini marshmallows.
Refrigerate for one hour and then slice them into squares. Put them back in
the refrigerator for them to completely chill. If you wait to cut them into
squares after it is completely chilled, then it will be harder to cut them
into squares. Serves 20.
Note: The real name of this is Rocky Roads, but after I made them one
day one of my sons said to me, "If you close your eyes, the bottom of the
candy feels like a kitty's paw" - thus the name Kitty Paws.

CAMERON'S EASY CHERRY-PINEAPPLE DESSERT
1 stick butter or margarine, melted
1/2 c. chopped nuts (optional)
In a 11 x 8 baking dish, spread cherry pie filling, spread pineapple over
cherry pie filling, sprinkle cake mix (and nuts) evenly on top. Drizzle
melted butter on top of all. Bake at 350° for 35 minutes or until top is
golden brown. It's good served hot or cold.
Note: The last time I saw Cameron, this dessert was cooking. Cameron
and I made a plan to save some of the dessert for his after-school snack the
next day.

CHERRY CHEESECAKE FOR RAYMOND
Mix together cream cheese and milk with blender until
smooth. Stir in lemon juice and vanilla. Smooth into ready made graham
cracker crust pie pan. Chill for two hours. Top with cherry pie filling and
whipped cream.
Note: Ray loved this pie so much that I would have to make one for him and
one for the family.
