JOEY'S SATURDAY NIGHT SPECIAL MEATLOAF
A-1 sauce
ketchup
1/2 sm. onion, minced or chopped
shredded cheese (optional)
2 lbs. hamburger, or deer meat ( or
combination), ground
salt and pepper to taste
1 egg
Italian bread crumbs
In a large mixing bowl put in meat and egg, salt and pepper, three or four
good squeezes of ketchup, a shake or two of A1, and cover the top of the
mixture with bread crumbs. Making sure to enjoy it, insert hands and mix
well, really dig your hands in and squeeze everything together until it
stays together when you roll it in a ball in your hands. Put into a 11 x 9
baking pan, glass or metal, form into the shape of a loaf of bread, being
careful not to make it too thick. Should stand about 2-3 inches tall and
about 10-12 inches long. Salt and pepper again, take the ketchup and make a
zipper design on the top of the meat loaf. Then with the A-1 do the same
right beside the ketchup. You could also add bacon bits in the mix or make
it like a jelly roll and put shredded cheese between the two layers. Put in
oven and cook for 45 to 60 minutes at 350° until no red shows when cut with
a knife in the thickest part of the loaf.
Note: Joey enjoyed this with macaroni and cheese, peas, french fries
or mashed potatoes. Have not made it since he died.

DON'S FAVORITE COLD WINTER NIGHT'S MEAL
1 bay leaf
4 whole allspice
1 (10 3/4-oz.) can condensed consomme
1 1/2 c. dry red wine
1 can whole small onions, (or frozen)
1 can mushrooms
2 T. brandy
In heavy pan slowly brown meat all over in butter (or fat). Sprinkle flour
over meat, stir well and add carrots, onion, garlic, parsley, thyme, bay
leaf, allspice, consomme, and red wine. Bring to a boil, then turn heat on
low and simmer 2-3 hours. Stir frequently. Ten minutes before eating add
small onions, mushrooms and stir in brandy.
Note: Don never like cold weather but actually looked forward to it, in
a way, so I would make this.
